Our sturgeon farm is almost near the Caspian Sea Water quality is most important factor for European. aquatic animals and fishes need to live and breath in water. Optimal water quality depends on species and must be monitored to ensure growth and survival. Water quality can significantly affect the fish health and improve quality of caviar and fish meat, as result attract customer satisfaction. Water quality parameters that commonly must be monitored in the European include temperature, dissolved oxygen, pH, ammonia, nitrite, alkalinity and hardness. Also water must be without any biological, chemical and physical pollution. Then we try to find region that have water with high quality and optimal factor for sturgeon fish to present the high quality and healthy product.

BELUGA

Produced by the biggest freshwater fish, this caviar has big, pea-sized eggs that are clear, glossy, and soft. It has a creamy taste Beluga caviar is caviar consisting of the roe (or eggs) of the beluga sturgeon Huso huso. he beluga sturgeon can take up to 20 years to reach maturity. The fish harvested for caviar are often nearly 900 kg (2,000 lb). The eggs themselves are the largest of the commonly used roes, and range in color from dark gray (almost black) to light gray, with the lighter colors coming from older fish, and being the most valued. The most expensive caviar is “Almas”, a golden caviar produced by very rare female albino sturgeon between 60 and 100 years old, which swims in the southern Caspian Sea near Iran where apparently less pollution exists.

OSSETRA

The Ossetra sturgeon is one of the oldest fish breeds globally, dating back to the dinosaurs’ time. It is undoubtedly a native of the Caspian Sea. They are one of the prehistoric species of animals whose appearance never changed over time. They can grow up to 2 meters and weigh up to 200 kg. Their age of maturity is 12 to 15 years, and they can live up to 60 to 80 years. And even some fish manage to reach 120 years. Its color can be brown with background of olivaceous or in the rare cases is golden. The roe diameter is over 2.8 mm . The roes are firm and will burst with pressure in the mouth. It has a light aroma of nuts. The caviar : Some roe is albino white. The Osetra sturgeon is smaller than the Beluga, and its eggs are firmer compared to the delicate Beluga caviar. The rarest color of Osetra caviar is golden yellow

Classic Siberian Caviar, so called Baerii caviar, is harvested from the Siberian sturgeon (acipenser baerii). It is a fine-grained caviar recognized for its pure, elegant flavor. It originates from the Siberian area of Russia . the species normally mature in the 7th ~8th year , and can live us to 20 years and reach over 15kg .It called in scientific name Acipenser baerii and in business market called Siberian sturgeon.Its color can be brown , gray ,or black .The roes look shiny and crystal , the diameter over 2.6mm . the flavor is pure with a light after taste and is recognized by its very aromatic and fine-spicy taste.

SEVRUGA

Of all the sturgeon species, the Sevruga from the Acipenser stellatus sturgeon, reproduces the quickest, and therefore is much more available, which translates into lower market prices for this delicious caviar Caviar from Sevruga sturgeons; Small- to medium-sized eggs with a with a color that ranges from pearly grey to charcoal grey with eye shaped patches. ALMAS

Almas, pseudonym of the most expensive caviar extracted from a very rare female albino Beluga sturgeon which its natural habitat is in the Caspian Sea particularly the regions that appears less polluted. Almas is a Persian word which signifies “diamond” refer to its price that is almost as high as that of the precious gemstone and its appearance looks like unpolished Diamond.The wild ones can be found in the Caspian Sea . The species normally mature in the 15th ~ 20th year , and can live up to 100 years and reach over 1000kg. The scientific name is Huso Huso .this precious species is the biggest sturgeon.
